Menu Plan & Must try Mondays! + Photo Challenge March 5



Menu Plan Monday:
Monday: Make Ahead Unstuffed Shells
Tuesday: Broccoli Fettuccini
Wednesday: Chicken Satay with Rice
Thursday: Hamburger Helper
Friday: Beef with creamy horseradish sauce, Debbie’s potato balls and Roasted Veggies


Look at how tasty tonights meal looked - I made the Make Ahead Unstuffed Shells adding some sauteed fresh spinach to the Cheese section and man was it tasty!

Must Try Monday:
Roast Beef Tenderloin with Creamy Horseradish Sauce


Ingredients:


• 1.5 kg (3 lb) beef tenderloin, trimmed and tied at regular intervals
• 15 ml (1 tbsp) olive oil
• 5 ml (1 tsp) each coarse salt and fresh cracked pepper Horseradish Sauce
• 15 ml (1 tbsp) butter
• 125 ml (1/2 cup) minced shallots
• 15 ml (1 tbsp) grainy mustard
• 15 ml (1 tbsp) prepared hot horseradish
• 1 ml (1/4 tsp) each salt and fresh cracked pepper
• 125 ml (1/2 cup) beef broth
• 250 ml (1 cup) heavy cream
• 15 ml (1 tbsp) chopped fresh chives


Preparation


• Let beef sit at room temperature for 1 hour prior to cooking.
• Rub roast with oil, salt and pepper. Heat a large heavy pan over high heat. Sear tenderloin on all sides just to brown, about 1 minute per side.
• Arrange on a rack over a rimmed baking sheet or roasting pan. Transfer to a 160 C (325 F) oven and roast until meat thermometer registers 63 C (145 F) for medium-rare, 30 to 40 minutes. Transfer to a cutting board to rest for 15 minutes while making the sauce. The internal temperature will go up 3 C (5 F) in this time.
• In a skillet, melt butter over medium-high heat. Cook shallots until tender and golden, about 8 minutes. Stir in mustard and horseradish, salt and pepper.
• Whisk in beef broth and any juices from roast and cook until reduced by half, about 3 minutes. Stir in cream and bring to a boil; cook until it starts to thicken, about 5 minutes. Whisk in chives and serve immediately with sliced beef and preferred sides.
