Meal Plan Monday, October 24th

I'm trying to get back into Meal Planning. Every week I used to post my meals for the week, and then review the meals from the previous week. I found that posting about it helped keep me accountable to my meal plan (and helped me when I was making meal plans in the future, to remember what we'd like and what we didn't like, or what was too tricky to make on a week day, or just right). I started slowing down sometime a couple years ago and never picked up on it. I've still kept some meal planning going but once I was on Mat leave I found that I really let that go, since I was more able to wing it. But that meant I started facing the problem so many people face; not knowing what to cook, not planning well for the meals, and therefore, spending more on groceries than I needed to. So my goal is to get back into it!

I've switched my system slightly from before. I wrote a post about my old meal planning system here. This system worked perfectly when I was at an office for most of the day - I needed something that was held in the cloud, rather than a concrete place, so that I could access it from anywhere (work or home or the grocery store). I used this system for over two years, and actually, used it during the beginning stages of having a newborn when it was often easier to look things up on my phone (while breastfeeding, etc) than write things out. When we had a new little baby, I could also enter into the calendar in the meal space if someone was bringing a meal and what they would be bringing (and when they would be bringing it), which was really helpful to keep that space clear.

But I find that I have naturally switched my planning since working from home and being on the go so much. I always have my planner with my and I like having the meals there. I also still have my whole calendar online; there's something about having everything twice (once online and once written) that helps keep me extra organized. So now my menu planning is mostly done during times where I'm mostly occupied but have spare brain cells that need focusing to help keep me organized (watching TV or a movie, sitting in a meeting or church, etc). I've learned with my ADD that I focus more if I can keep a small portion of my brain active doing something.

I keep a list of meals I like making or want to try (similar to my system before) written on flags on the front inside of my planner. Then I look at what I need on a particular day (ie. we have guests coming over who don't eat red meat and I'll have a bit of time to make something nice - so I'll pick a nicer meal that's more involved and is a chicken or fish dish, or we have meetings that evening and I'm working most of the day, so I'll do an easy crockpot meal) and place a meal flag on that day. It's simple, takes less than 5 minutes and I have the whole week planned. Because we have a house full of students, I'll often write out the list on a little meal planner I found at a cute little stationary store, and put that up on the fridge. It lists who will be home and who will be out, as well as what we'll eat.



It's a simpler and more complicated system, in different ways. But it's working for me, and so there you go. I'm excited to really get back to Menu Planning more though - you guys can be my accountability!

Menu Plan Monday with Laura at Org Junkie

Upcoming week: 

Tonight we have a family coming over for dinner that we haven't spent any time with. Paul and I met the husband at our old street's block party - this family moved there a month after we moved out. We liked the husband right away, so we had invited them to come over once his wife and kid had joined him in Vancouver. It's always a little nerve wracking having a new family over (who knows how we'll click!) but also just exciting enough that I keep trying (so often it goes way better than expected and is just pure joy).

TuesdayIndonesian Chicken with Peanut Sauce, Rice & Veggies
We have friends coming over for dinner - they are always happy to eat anything but are both Philipino (he's 1/4 and she's full) so I thought making rice for them was loving :) This is one of my favorite recipes and I'll be honest, I don't follow the recipe I linked to above - I use an Indonesian Satay Package for the chicken, and then a jar of peanut sauce (and I add more peanut butter to it). Easy and super tasty.

WednesdayThai Coconut Chicken Curry Soup (recipe from Paul's cousin Janice)
Janice brought this soup over a week after Avie was born. It was so amazingly tasty, and she said it was easy! I've made it a bunch of times since - though it's never quite as good as when she makes it. My goal is to go over to her place and watch her make it, then I can write about it here. Because man, it's good. 

Wednesdays are my long day - Paul volunteers downtown as a chaplain at the Salvation Army Belkin House. I love that he does this - and he loves doing it - but it also means he goes there straight after work and isn't home until after Avie goes to bed. So dinner, cleanup and bedtime are up to me. I try to make easy meals that are easy to clean as well. Plus somehow we don't end up having many students home Wednesdays - but the week I don't plan a meal for a Wednesday assuming they will all be out, will inevitably be the week they are all home. So I always make up a meal, and then use any leftovers for lunches. Which is a win win. 

Thursday I have a phone call with a dear friend at 4:30, and then am meeting with two of my best girlfriends for our bi-weekly discipleship group at 8pm, so I try to make something easy and simple. Everyone in my house loves breakfast for dinner, and when I've made this dish it's been super popular every time (even when I've waaay over cooked the eggs). 

Friday: Costco Dry Ribs with potatoes and veggies
Paul will be hunting all weekend so I can make these Dry Ribs that he doesn't usually love but are a house favorite. I am hoping to have a girlfriend over for dinner, so it doesn't feel so lonely with Paul away. I guess I should invite someone soon, or it won't happen, haha.

Saturday/Sunday: YOYO (You're On Your Own)
Avie and I will try to keep ourselves busy all weekend and hopefully visit someone Saturday night, then church sunday is at dinner time so we normally snack a bit before and after. Our students are on their own for meals all weekend.

Menu Plan Monday, October 12th

Menu Plan Monday with Laura at Org Junkie

Upcoming week: 

TuesdayShepherds Pie
Over thanksgiving weekend I combined veggies, gravy and turkey into the shepherds pie base and then topped with mashed potatoes for the topping. I froze one and made another for the fridge for Tuesday. After a holiday weekend it's great to have easy meals when I'm all vacationed out. Tuesday I have a staff meeting after going to the YMCA and then will go to Costco to buy stuff for the week.

Wednesday: Broccoli Rice Bake
I will cook rice, mix with leftover turkey and broccoli and bake. For myself I will make cauliflower rice to mix with these things. I can make this up Tuesday evening so it just needs to be baked Wednesday afternoon, which is perfect since I have a visit downtown, women at prayer, then a family gathering....so an easy dinner is important!

Thursday: Butter Chicken (with Turkey)

Thursday is a family walk and packing for the weekend - food prep, clothes packed, etc. So easy butter "chicken" is helpful. 

Friday/Saturday/Sunday: YOYO
I'll be visiting with my Nana on the island! Woot woot!

Monday we had great friends over - one of them is heading back to Ireland and I will miss her a lot. 

TuesdayCrockpot Chicken Taco Soup
Tuesday night we had plans at 4 to bottle beer, having crockpot soup in the crockpot was super helpful. 

Wednesday: Slow Cooker Spinach Pesto Lasagne Breakfast for dinner
Wednesday was a busy day. Time with my mom, lunch with a friend and driving another friend. Who doesn't love breakfast for dinner? I made a regular breakfast for dinner for Paul and I but two of our other students were out so I mixed the rest of dinner together into a casserole dish and served a successful breakfast casserole. 

Thursday: Pumpkin Soup Tilapia Veggie Stack

Didn't buy a pumpkin or many onions. So Tilapia Veggie Stack was born. 




Friday: Nachos 
Friday night was a pre-thanksgiving dinner hangout for our friends. So much turkey over the weekend always makes me want mexican.

Saturday: Thanksgiving Dinner (with friends)
Saturday was our family and friends dinner - international students and homestay students! It went so well. New friends, great food.


Sunday: 
Thanksgiving Dinner (with the Mitchell's)
Sunday was family brunch. I made Cheesecake Caramel Pumpkin Cups - always super popular. Then we headed out to Surrey to stay with Paul's Dad and step-mom. One of our happiest places. 

Monday: Thanksgiving Dinner (with the Morgan's)

Dinner with the other half of our family! We got to sleep in while the rent took care of Avelynn. Great relaxing morning and then a wonderful dinner. So full. So good.

Tilapia Veggie Stack

Recently I picked up some Tilapia Burgers from Costco thinking they would be easy to make and eat. Then I forgot about them for a bit. One day I had no idea what to make and wanted to make something healthy and I remembered the burgers!! I decided that I didn't want to make actual burgers, that I wanted something healthy and tasty that didn't feel healthy. We had leftover Rice and lots of veggies, and so this idea was born. The Tilapia veggie stack. And oh was it good. 



I threw the burgers into the oven, and then diced a tray of vegetables and roasted those in lemon dill sauce. Peppers, Mushrooms, Zucchini & asparagus. I also steamed some broccoli and added that to the mix once it was roasted. I also diced up raw tomatoes to top the mix with. I crumbled up some Queso Fresco/Cojito cheese (feta or mozza or parmesan or anything really would also work - or goats cheese if you like that gross stuff). I also mixed some pesto with some mayonaise because why not. 

To plate each meal I laid out rice on each place (cauliflower rice for me), then topped with the veggies mix. I placed a burger in the center, spread pesto mayo on each item, added raw diced tomatoes and sprinkled the whole thing with cheese.

Seriously. This dinner. So easy. So tasty. Healthy. This is going on repeat. 

Ingredients:
  • Tilapia Burger Patties
  • Rice
  • Veggies (Mushrooms, broccoli, peppers, asparagus, tomatoes)
  • Cojito Cheese 
  • Pesto (two spoonfuls)
  • Mayo (one spoonful)
  • Lemon Dill seasoning to flavour

Instructions/ The Prep:
  1. Cook Tilapia Burger according to package directions
  2. Dice and roast vegetables (seasoned with oil and lemon dill seasoning)
  3. Crumble/Shred Cheese
  4. Cook Rice (I used garlic and onion seasoning with broth)
  5. Dice tomatoes
  6. Mix Pesto & Mayo
Instructions/ The Prep:
  1. Plate Rice in a circle on center of the plate.
  2. Add veggies on top of the rice.
  3. Center the pattie on the stack. 
  4. Spread pesto on pattie.
  5. Top with tomatoes
  6. Sprinkle with cheese
And voila. A wonderful, healthy, tasty, snack.

Menu Plan Monday, Oct 6

Menu Plan Monday with Laura at Org Junkie

Upcoming week: 

Monday: Indonesian Chicken Satay, Peanut Sauce with Rice & Stir Fried Veggies
Monday we were having friends over for dinner - a dear friend is heading back to Ireland and I wanted to serve her a last asian dinner...or at least as Asian as I get :)

Tuesday: Crockpot Chicken Taco Soup
Tuesday night we had plans at 4 and 8 so a crockpot dinner was a necessity - and this dinner is not only easy but super super tasty.

Wednesday: Slow Cooker Spinach Pesto Lasagne
Wednesday is a busy day - my mom was been not feeling great so I will be walking with my folks and my sister, then meeting up with a friend for coffee, and then driving a student to the airport, so another crockpot dinner is important. I will make sure to make some veggies that I can eat since Lasagne is not on my go list.  

Thursday: Pumpkin Soup

Thursday I am free most of the day so I can take some time to invest in Pumpkin Soup. Mostly it's onion soup...but good, so good. So worth the investment.

Friday: Nachos (creamy chicken taco mixture)
Friday night is a pre-thanksgiving dinner hangout for the Mitchell family. Nachos as our place! Easy and fun! 

Saturday: Thanksgiving Dinner (with friends)
Saturday is our family and friends dinner - international students and homestay students! Woot.


Sunday: 
Thanksgiving Dinner (with the Mitchell's)
Sunday is my family dinner + church. Woot again. 

Monday: Thanksgiving Dinner (with the Morgan's)
Dinner with the other half of our family! Woot again indeed.

I finally have time to get dinner prepped before the final minutes. It's rewarding to spend time in the day getting dinner ready. I mean sometimes baby things pop up and it's crazy but generally I can take an hour earlier to get dinner ready, then go back to baby life. Really all it's done is moved dinner prep forward....and that's relaxing. Finally no last minute stress.

And also now it's late. So there you go. Bedtime!

Menu Plan Monday, July 20th

Menu Plan Monday with Laura at Org Junkie

Upcoming week: 

Monday: Crockpot Spinach Pesto Lasagne
Monday I was out with a girlfriend over dinner time so I left this in the crockpot for the house, and while I fed Avelynn before leaving I had butter chicken served over roasted zucchini & peppers instead of rice. I spent the evening overlooking water with my friend Arlene and it was lovely. 

TuesdayWontons (on sale at Costco), Yellow Curry Chicken (marinated with TJ's Yellow Curry) served over carrots, green beans and potatoes. 
Tuesday night Paul is out and I'm home with Avelynn in the evening, but we're all home for dinner. Paul was home sick and I ended up cancelling my plans after being up through the night with Avelynn so it was easy to pull dinner together.  

Wednesday: Freezer Soup (sent by Nancy) with Beer Bread
Wednesday night I am out with some women for dinner and conversation, so I'll be defrosting some wonderful chicken soup and popping some beer bread in the oven for the house. 

Thursday: Deer Roast (with Horseradish Gravy) with potatoes & veggies

Thursday night we are going on an adventure to Lynn Valley Canyon with our student Santiago and will be having this dinner before hand. I've made the deer roast (from Paul's hunting trip in the fall) before, but this time I am going to follow this beef roast recipe and see how it tastes!

Friday: Grilled Chicken (thighs and legs) with corn on the cob & greek salad

Friday is an at home night since Paul probably has plans. I think we'll end up going for a walk, me and Avelynn. Either way we'll all eat dinner together as a house before hand. 

Saturday: Ribs, Potatoes & Veggies
Saturday we have an event in the evening but I can put ribs in the slow cooker and that is Paul's favorite so he'll be happy and nice and easy for summer. We'll have an around the house day so having an easy meal will be helpful. We'll work on house stuff, especially clearing out the laundry room. Then that night we go watch our friend Sam play. Love it! (Though we must confirm that baby can come to the venue!)


Sunday: Leftovers

Sunday we have a picnic to attend for our homestay student, Santi,'s class. It's at Jericho beach. Rather than bring the grill for sausages I think I will do all cold foods....greek salad, veg & dip, meat & cheese tray. Nice and easy.

Butter Chicken Stuffed Peppers



Living in Vancouver has stretched my plan "white" taste buds in wonderful ways. Moving over from a small town on an island meant mostly I ate at chain restaurants - White Spot, ABC Pantry, Smitty's, Swiss Chalet, etc. We ate white people food. Sometimes we would go "foreign" and eat at the Pine Cafe (westernized "chinese" food - I use the term loosely since it was very westernized) or Wait U (for "chinese" food to go). Moving to a very asian big city was a BIG adjustment. Slowly I have grown to love vietnamese food and thai food. I have found a Dim Sum place I LOVE, as well as a little chinese cafeteria I really enjoy. Also I was introduced to butter chicken and man am I pleased about that. I first had Butter Chicken made by my Auntie Debbie and then felt brave enough to try it out at restaurants. I always love it. I got my aunts recipe and it's something I love to make at home.

Upcoming week: 

Monday: Costco Chicken Curry with steamed veggies
Monday is a work around the house day, as much as is possible with a baby. I'm cleaning up after the weekend and getting ready for the week ahead. Also a thrilling Costco trip will be in my future for this day. 

Tuesday: Casserole (sent by Carrie M)

Tuesday I try to walk with my sister and my parents and will keep trying to truck away at some organizing around the house. 

Wednesday: Man Pleasing Chicken, potatoes & veggies
Wednesday we are having a going away dinner for one of our former students, Gwen. She goes back to France on Thursday. We'll have a couple people over for dinner with us and will wish her many fond farewells. And we will have ice cream cake :)

Thursday: Chicken Taco Soup (sent by Lindsay)

Thursday we are out for dinner so I'm going to pop this into the crockpot for our students to enjoy and it will make excellent lunches or meals while Paul and I are away over the weekend (and for us to eat Friday). 

Friday to Sunday: YOYO (You're on Your Own)

This Weekend we will be in in my hometown, Port Alberni, to pack up my Grandma's things. She's moved into a home so we are helping the family prepare her house. It will be the first time we are all together in Port Alberni since my cousin LeAnna's wedding in 2010! I'm excited to go home - I love my hometown. I won't have time to see friends - it will be family family family all the way (plus a dip in the lake) but it will be nice to be there all the same. 

I have been finding it's hard to stay afloat with a newborn since there are some problem areas in the house that drive me nuts! Our fridges and freezers and our linens. These areas are disorganized and full. I want to clean them out so that I know what we have and can access it easily.

Menu Plan Monday, April 13th

Menu Plan Monday with Laura at Org Junkie

Upcoming week: 

Monday: Man Pleasing Chicken with scalloped potatoes and vegetables Pizza
Monday has been spent downtown - I drove Paul into work then headed to the Pan Pacific Hotel and Spa Utopia. I checked in early for my massage and rested and relaxed. Then I had a fabulously relaxing pre-natal massage followed by more resting - I read my drink and drank tea in a champagne flute (amazing). After a shower and a time of doing my hair (they had a hair straightener for use! So smart)  I headed to the food court nearby for lunch - reading and eating, my favorite! Then I headed towards my old work building to visit my old colleagues and after that moved on to Paul's work to see him and his workmates. At this stage I'm waiting downtown for Paul to head home with him and I'm having fairly mild to medium contractions about 10 minutes apart - I am not sure if I'll end up making dinner then - I guess time will tell!

Tuesday: Creamy Chicken Tacos

If I haven't continued in labour then I'll be making these super super easy tacos. Also I'll be having another non-stress test to monitor our sweet little babe.  

Wednesday - Sunday: YOYO (You're on Your Own)
Wednesday is induction day. Since things are already starting to heat up I think I'll plan not to plan further. We have Pizza's and such at home if I haven't had a baby and if I have then my house is on their own until we're home! After that my aunt will be over to help for a week.

Upcoming week: 

Tuesday: Creamy Chicken Tacos
Tuesday is an at home day. I will rest and prep food for the week, and also do some small jobs around the house. 

Wednesday: Italian Baked Chicken with roasted peppers stuffed with rice & vegetables
Wednesday is women at prayer in the morning (love it) and then off to my weekly check in with the doctor. Also resting.

Thursday: Man Pleasing Chicken with scalloped 
potatoes and vegetables
Thursday is a walk with my parents in the morning - usually I'm pretty tired after these walks so I'll be resting for the afternoon and then hanging out with my sister in the evening. 

Friday: YOYO (You're on Your Own)

Friday is a wedding for two dear friends - so this is when we find out if we get to go to the wedding or we're home with baby? Who knows what the end game is! Will baby be here? Will we get to attend this wedding? When we first heard about their engagement I remember wondering, will we be able to go? Will we have a baby by then? And less than  week before the day I'm still wondering!

Saturday:  Maui Ribs served with baked potatoes & vegetables

Saturday we have no plans. Again - who knows if baby will be here!

Menu Plan Monday, March 30th

Menu Plan Monday with Laura at Org Junkie

Upcoming week: 

Monday: Crockpot Pork Roast with Baked Potatoes, Broccoli & Potatoes
Monday was a stay at home sort of day - I rested and tidied and prepped food. I slowly made dinner and was thankful for the pace. I also did some parking lessons with my Dad to get the feel for our new van - it's so big but as always, vehicles are never as big as we think they are. It was a super useful time and I'm so thankful for it! Also this crockpot pork roast recipe was a HUGE winner and I will definitely make it again. So good!

Tuesday: Carnita Tacos
Tuesday is Carnita day - I've got a pork shoulder ready to put in the crockpot for the day and we will enjoy Carnita Tacos for dinner. My plan for the day is to swing by Costco to get the groceries we need - but aside from that I'm staying home and not doing anything. 

Wednesday: Coconut Rice with Chicken in Peanut Sauce (served with green beans)
Wednesday is a bit of a busy day, women at prayer in the morning, lunch with a friend and then my weekly doctors check in. I plan to rest in the afternoon before dinner. 

Thursday: 
Crockpot Creamy Chicken Tacos
Thursday is a walk with my parents and a relaxing visit with a friend, before an evening with my sister and her boys. An easy crockpot dinner is definitely in order. 

Friday: 
Man Pleasing Chicken with Vegetables & Rice
Friday is Good Friday, so Paul will be off work. Who knows when Baby will come, though it'll be getting much closer to I wanted to plan a meal that is a bit more intensive since I know I'll be taking a break soon. 

Saturday: Italian Baked Chicken with potatoes & vegetables
Saturday is free of plans! 

Sunday, April 5th - 40 week, Due Date: 
YOYO
Sunday is my Due Date, as well as Easter Sunday. I'm DEFINITELY not cooking dinner that night, no matter what happens. 

MondayMitchell Family Dinner
Monday is a Mitchell Family dinner for Easter and a nice day off with Paul. Again we have no plans since the wait is truly on for our sweet girl!

Upcoming week: 

MondayYOYO
Monday was dinner with new friends Mark & Janis at their house after a morning of Mac learning (Organizing Your Mac & Personalizing Your Mac) and a brief USA trip to pick up a few packages. The trip was fast and easy, the learning in the morning was great and our time with our new friends was so wonderful. Plus they made me gluten free pasta that tasted fabulous!

Tuesday: Maui Ribs, Vegetables & Baked Potatoes
Tuesday I am staying home - folding newly washed baby clothes, working on our taxes, prepping food & cleaning the fridge, RESTING and working around the house. Then it's dinner with the house, ending with D Group at 8 at Lindsays place.

Wednesday: Man Pleasing Chicken with veggies & potatoes 
Wednesday I am seeing my good friend Sarah for coffee, we haven't hung out in over a year so I can't wait! I will also be seeing my doctor for my weekly check in and having a 38 week mani/pedi to celebrate hitting my due month, thanks to a gift from my boss. Stoked! I have no evening plans so this is a good night to make a great dinner. 

Thursday: Crockpot Creamy Chicken Tacos

Thursday is family walk, lunch with Paul's grandparents, time with my sister and a movie date night with Paul to see Insurgent at the VIP theatre. Awesome day. Mexican food after a day with family and before a date - win!

Friday:

Friday is lunch with my cousin LeAnna at her work & an evening with the Froese's - Laura is kindly cooking since I am so pregnant - so that's a nice treat!

Saturday: YOYO
Saturday Paul is most likely away all day for a stag so I'll be doing more of the resting and nesting that I'm prone to doing now and will spend some time with family as well hopefully. 

Sunday: 
Melt in your mouth chicken with veggies & rice
Sunday is a Women's Ministry Meeting in the afternoon, then church, and dinner with our house and maybe some friends? Hopefully also some resting and sleeping in as well, and putting up a collage wall in Avelynn's room with Paul.

Menu Plan Monday: 33 weeks and counting

Currently there is a 33 week baby moving inside of my belly. I realize that's normal for being 33 weeks pregnant but wow, what an interesting feeling. There is a little tiny baby bum sticking up at my belly and a little knee that keeps pushing at my sides, and two tiny little fists that pummel my lower belly. Despite some the discomfort that comes with this, it's also miraculous and so so cool. I mean that's a human in there who will become like a real live person and I can get to know her now, before she is even born. That's just crazy cool. 

Last week was a busy one at work - as of this weekend I only have two weeks of work left (8 days!) and I'm thankful to say that I've finally gotten through all my major tasks at work and just have training left to do and tie up a few loose ends. It feels pretty awesome. On top of work we had a super busy long weekend, busy evenings and lots of house stuff to do to get ready for baby.


This week my grandpa passed away. He was two weeks from his 90th birthday and had been sick for a while, so while this was unexpected it wasn't as shocking as it might have been and thankfully he passed away peacefully, in his sleep. The staff at the home he was living in were sad to see him go - they had enjoyed him being in their space. We've spent the last couple days alerting family and planning the funeral; it's certainly a new learning curve. Next week my girlfriends are throwing a baby shower for me after my maternity photo shoot, and then the following day we will have my Grandpa's funeral - the full circle of life. It all makes for a very interesting range of emotions and tasks. It's also a reminder that in death and life, the daily grind continues for us.

Monday: Porkloin, vegetables & mixed rice
Monday is the start of my 4th final week before mat leave, 14 working days after today. CRAZY. Tonight we don't have to rush out as soon as dinner is over, so I can make a bit more of an intensive dinner and I have a porkloin thawing in the fridge and a batch of rice cooked up from the weekend. 

Tuesday is Lifegroup and I'm making an LG favorite, Chicken Taco Soup. Easily popped into the crockpot in the AM and always super tasty. 

Wednesday: Slow Cooker Pesto Spinach Lasagna
Wednesday we have prenatal class, so crockpot meals are vital. I obviously can't eat this meal (noodles have wheat) but it's pretty easy to whip something else up for myself if everyone else is taken care of. Then we're off to our 4th prenatal class! Halfway done!

Thursday: Salmon, Vegetables & Potatoes

Thursday is a meeting with Paul and my uncle at 8pm, so we don't need to rush right out. We have a Salmon in our freezer from my Dad that I've been wanting to make. I plan to marinade it over the day in Yoshida sauce, which is always awesome. 

Friday: YOYO

Friday we are headed to our friends the Montroys for dinner, so our house is on their own!

Saturday: Tangy Grilled Chicken, Baked Potatoes, Corn on the Cob & Roasted Vegetables
Saturday we will pop over to the states in the morning to grab some groceries, and check out cribs (then we can make our final crib decision). I plan to take a nap in the afternoon, and hopefully do some painting in the garage (with a mask on and doors open). We have our friends the McCarthys coming over for dinner and I'm really looking forward to it. 

Sunday: 
YOYO / Appies from around the house
Sunday is a busy day, working around the house in the morning, a baby shower mid day, church, and then a post church hangout to enjoy our friend Jodi being in town! Phew! Thankfully Monday is a holiday!

Menu Plan Monday, January 19th

Menu Plan Monday with Laura at Org Junkie

I have been out sick for the past week+. I mean OUT. I missed every day of work last week except for 1, and even then I could have easily slept through that entire day also. I have tried to do a whole lot of nothing - my students and Paul made dinners and lunches all week and I rested, trying to keep myself and baby happy. I was pretty miserable all week - it wasn't a regular kind of cold, but a kick you while you're down sort of sickness so it mostly took everything in me to keep going each day. I had some weepy moments as I wasn't able to sleep more than an hour at time for the entire week - whether it was the sore throat of the early sickness, or the congested head of the latter. I felt like a wimp, but man it was bad. When I finally made it (hacking and coughing) into work on Thursday I learned that half of my office had been out with the same thing, so that made me feel less pathetic. It wasn't just me that found it bad, but it was bad for everyone. So there's that. Finally I'm back to 80% so I'm at work and doing life, with just a mild cold now.

Menu Plan Monday, January 5th

Menu Plan Monday with Laura at Org Junkie

Upcoming week: 
Monday: Costco Easy Deli Option
Monday is back to the grind day. We are swinging by Costco on our way home from work and hopefully I will be in bed by 9pm tonight! We'll see if that happens.

Tuesday: Spaghetti & Meatballs

Tuesday is Lifegroup and Spaghetti & Meatballs are easy to make! I will do Spaghetti Squash for those of us with food issues (one non wheat, one no gluten and one needing healthy choices due to pregnancy). 

Wednesday: Crockpot Honey Sesame Chicken
Wednesday is our student Xiao's birthday so I'll be making an asian dish in honor of her! and Crockpot is a necessity during the week days! Over the evening I will have Trader Joes Italian Meatball Soup cooking in preparation to give some to a friend with a new baby and to serve on Saturday.

Thursday: Crockpot Cheesy Potato Soup
Thursday we're visiting a friend and her new baby, so this crockpot soup will help get us out the door on time. We'll be taking a portion of the soup to give the most likely, tired parents!

Friday: Parmesan Crusted Pork Chops, roasted vegetables & potatoes

Friday we will have people over, I think, still nailing down the details. So I've planned a nice meal in case.

Saturday: Trader Joes Italian Meatball Soup
Saturday is a friends 60th birthday, so I'll be pulling this soup out in the late afternoon to help tide people over.

Sunday: Melt in your Mouth Chicken with baked rice & veggies

Sunday we have church at 5:30. This meal cooks in an hour and a half which means it's perfect to put in the oven right before we leave and eat afterwards!
