Menu Plan Monday: August begins



Menu Plan Monday with Laura at Org Junkie

Upcoming week: 
Tuesday: Crispy Black Bean Taco's
Tonight I need to catch up on cleaning and tidying after my lake day yesterday but other than that I don't have plans - seemed like a good night to try something new. And I'll use corn tortilla's so I can eat them!

Wednesday: Pizza Bubble Up
Wednesday we will be working around the house. Bubble Up's are always crowd pleasers. I'm needing to take a meal to some friends with a new baby so I'm going to double this recipe for them. Also I'll be serving mine with Zucchini, rather than bread bubbles.

Thursday: Slow Cooker Chicken & Rice

Thursday Paul and I have dinner out with friends, so I can leave this meal in the crockpot with some rice (made the night before) and voila! Easy for our students. 

Friday: YOYO
Friday night Paul has a games night and I have a friends birthday party

Saturday: YOYO

Saturday night we have dinner out with friends.

Sunday: Creamy Swiss Chicken Bake
Sunday it will be nice to eat at home together - I'm hoping to get a bunch of painting done in the day, then proceed to church. 
In Review:
Monday: Spaghetti with Spaghetti Squash for me!
Monday night was lovely - it was another beautiful summer day  and Paul's Dad and sister randomely joined us for dinner. It was great. Then I was off to meet Madelaine, my friend Emily's sweet baby. Good night all round!

Tuesday: Hot Dogs, Pasta salad, Spring Salad, Potato Salad & Popsicles
Tuesday night was lifegroup night and we headed out to Sasamat for hot dogs & salad, as well as water play. After eating we quickly headed into the water and spent almost 2 hours playing catch in the setting sun, it was lovely. So much fun. 

Wednesday: Pizza Night (Cauliflower Crust for me!) Hot Dogs & leftover salads
Leftovers were handy for Wednesday night. Paul was out with my brother in law at the new planet of the apes movie and I ended up visiting my sister and her kids after dinner, then heading off to Home Depot to pick up paint for a project. I also splurged on a staple gun and sander. Woot woot! 

Thursday: Mediterranean Boneless Pork Chops Yoshida Pork Chops with baked rice, roasted veg and salad. 

Thursday night our amazing friends the Roos' came over for dinner. We had a lovely visit with them, then they helped us move a bunch of furniture around to get ready for the students who arrived Friday and Sunday. The rooms looked awesome! More details to come tomorrow. The Roos' are so wonderful - they worked hard and tireslessly the whole time, despite how freaking hot it was. They rock.

Friday: Easy Roast Chicken Greek Chicken Wings with grilled veggies, baked rice & greek salad & fruit crumble.
Friday I worked all day and then came home early (love long weekends) to tidy and clean the house, as well as prep Dinner. Our new student Sam was arriving at 7pm with her whole family. We had a greek inspired dinner together and it was lovely. Meeting her was great - she'll be a great fit in our house, and her whole family was lovely. It was a really nice night. 

Saturday: Easy Garlic Chicken with grilled veggies YOYO
Saturday day was busy busy busy - we were so productive! We took a trip to the dump, cleaned out our garage and hit up Home Depot, Ikea & Sleep Country for some much needed bits and pieces. We finished the day ready to accomplish much on Sunday. We also got a great visit in with my Aunt and Uncle - which is always nice. 

Then it was off to the fireworks! We hung out at the beach for hours before grilling hot dogs, and playing (cards for the girls, football for the boys). Then the fireworks happened and I loved laying in the sand with my friends in the dark. It was lovely. 





Sunday: YOYO
Sunday we were up early to GET STUFF DONE. I made a big breakfast that we shared with Sam, and then it was off to build a headboard! The DIY will come tomorrow, but here's a sneak peak.



While I did the final room touches Paul worked in the garden getting a haul of figs, cucumber and zucchini - he was very happy!



We accomplished so much, then it was time to get ready for church. Church was awesome - the Mitchell's were back and Uncle Greg's sermon was so so great. Conviction and renewed drive were stirred up in me. Then it was time to head over to their house for a Church Open House. We had hot dogs and hung out in the sun for hours. Lovely. After that Paul and I headed out to Guardians of the Galaxy with a group of friends/cousins at 10:30pm (so late). The movie was great, despite 1am feeling hella late. 

Monday: Cilantro Lime Baked Shrimp Dry Pork Ribs with grilled vegetables

Monday ended up being my lake day. We were up at 8:15am and at the lake just after 9am. Paul and I brought Samantha along with us and we ran into our friends Margot & Gina there, so we spent the day with them. We floated and talked and swam and read and ate. When I got to hot I went back in the water. When I was too cool I sat in the sun. I got conversation and peace and quiet. It was LOVELY. I'm so thankful for a day to recharge my batteries and a day spent with friends!





Then it was time to head home and prep dinner. I decided to go with an easy dinner but guaranteed tasty dinner since we had a new student that arrived that afternoon (Nagisa from Japan, such a sweet girl) and I had three friends coming for dinner. Anacat, Nicole & Kristine came over at 7pm and it was so great to have them with us. We stayed up until 10pm talking. 

I made Baked Rice [saute garlic & onions, combine with broth and bring to boil, then pour over rice, seal with foil and bake at 450 for 45 minutes], Roasted Vegetables [chop veggies, any type, sprinkle with olive oil, garlic salt, onion salt and parmesan and bake for an hour at 450], Dry Pork Ribs [from Costco] and a salad. This my easiest go to meal. Everyone loved it and it made enough for lunches and leftovers! Win. 

Hanging out with these ladies on my cool porch, with twinkle lights around us as we talked about God and faith and life and got to know each other ended a relaxing day perfectly. I feel so blessed by this long weekend - and am thankful to have such a rad community, family and husband to do this all with.
